An Interview with Ruby from ByRuby

We caught up with Co-Founder Ruby to find out a bit more about her love of cooking and GIN!

How long ago did the idea of By Ruby come to you?

It was around 4 years ago when my co-founder Milly and I were working together at a gourmet deli called Finns of Chelsea.  We noticed an increase of frozen food requests from our customers. Then, when Milly had her second baby, her sister filled her freezer with delicious home-made meals to help her through those initial busy and exhausting months – and, of course, it was a complete life saver for her. These two things combined gave us a sort of light-bulb moment and, tasting what was already out there in the frozen food market, we knew could do something more inventive and delicious.

Which is your favourite meal to cook?

I love making a Miso Ramen. It’s full of so many lovely ingredients that are nourishing and warming – and it looks great in the bowl too!

And to eat?

It has to be the chicken pie. It’s our best seller and seriously comforting and morish – like a big hug in a meal. Perfect for those midweek slumps!

Where would we find you taking some time out of the kitchen?

Most likely, particularly at the moment, walking my Mini dachshund Rolo in one of London’s lovely parks. Otherwise in a local Peckham pub with friends, or visiting my family in Bristol with my husband, Chris. I’m originally from there and love going back as much as I can.

How do you enjoy your Hayman’s London Dry?

I love it with lots of ice, a twist of lime, a sprig of rosemary and tonic. It’s even better enjoyed in a large goblet!

Who would you love to enjoy a G&T with (dead or alive)?

I would love to have a drink with Anthony Bourdain. I have read every single one of his books, and I watch his cooking programmes practically on repeat. I just know he would have some really gritty, funny kitchen stories to share (especially after a few G&Ts!). He’s  travelled so extensively to almost every part of the world that it would be amazing to hear more about all the different cuisines he’s enjoyed.

Sadly he took his own life a few years ago now, but given the opportunity he would be my dream G&T drinking buddy.

Is cooking more fun with a cocktail in hand?

 Definitely! Sadly this isn’t viable at work, however when I am cooking at home I love a cocktail in hand with the music cranked up high!  You can just get in the zone with no time pressures – I really believe that’s when some of the best creations are made.

Tell us a cocktail secret!

Well, I’m sure many can relate when I say I’ve definitely noticed that as the days are getting warmer I’m finding myself craving those cold, fresh G&Ts earlier and earlier – the old saying ‘It’s 5 O’Clock somewhere’ will definitely come into play this summer!
