With World Gin Day this coming Saturday 14th June, we couldn’t resist the opportunity to catch up with our friend and gin guru Emma Stokes
Add all the ingredients to a cocktail shaker with ice (shake really hard!) for 30-45 seconds. Double strain the cocktail back into the shaker and remove the ice, then dry shake (without ice) again. Slowly pour the cocktail into a chilled highball glass (best if you pour 2/3rds of the drink, let it settle in the fridge, then pour the rest). Top up with soda to create a foamy head and then garnish with a lemon peel.
