Ramos Gin Fizz

You will need…

  • 60ml Hayman’s Old Tom Gin
  • 15ml lemon juice
  • 15ml lime juice
  • 25ml sugar syrup
  • 1.2ml orange blossom water
  • 25ml pasteurised egg white
  • 25ml single cream
  • soda water

Steps to make…

Add all the ingredients to a cocktail shaker with ice (shake really hard!), and then remove the ice and dry shake. Slowly pour the cocktail into a chilled highball glass (best if you pour 2/3rds of the drink, let it settle, then pour the rest). Top up with soda to create a foamy head and then garnish with a lemon peel to finish.
