Vibrant Citrus Gin Sour

You will need…

ml oz

50ml 1.69 oz Hayman’s Vibrant Citrus Gin
25ml 0.84 oz Freshly squeezed lemon juice
10ml 0.33 oz Simple syrup (2:1 sugar syrup)
15ml 0.50 oz Egg white or 1/3rd pipette of Miraculous Foaming Bitters

Steps to make…

Add all ingredients to a cocktail shaker and shake with ice for 10-15 seconds. Strain the cocktail back into the shaker and remove the ice, then dry shake (without ice) again. Double strain into a chilled coupette. Garnish with dots of Angostura bitters, using toothpick to draw a pattern in the foam, or a lemon peel.
